AFFINAMENTO The whole grapes are placed in a pneumatic press; only the free-run must is used for the sparkling wine. Fermentation takes place at low temperatures in a 50hl pressure tank. Secondary fermentation takes place at low temperatures for approximately 90 days.
ABBINAMENTI ideal for aperitifs, Italian-style fried food, fish soup, white meats.
